On my Icelandic allergy blog (fullt af mat) I posted this Icelandic Marriagebliss cake known in Iceland as hjónabandssæla. It is a great oatmeal cake that we love to bake frequently. Traditionally we use rhubarb jam but I haven’t found a jam that doesn’t taste good in this cake!
I wanted to translate this into English since there aren’t many recipes of this cake online in English that are correct and I haven’t seen any that are gluten free and vegan.

Ingredients
- 85 gr gluten-free oats
- 65 gr gluten-free flour (I use Dove white bread flour)
- 50 gr rice flour (I use Dove rice flour)
- 60 gr brown sugar
- 1 tsp baking soda
- 2 tsp vanilla extract
- 90 gr vegan butter (or another suitable butter alternative)
- Jam
Instructions
- Mix everything well together, except for the jam.
- Grease the baking dish with vegan butter. I use a baking dish that is 27×18 cm
- Firmly press 1/3 of the dough into the dish.
- Carefully spread the jam over it.
- Crumble the rest of the dough on top.
- Bake at 180°C for 20-25 minutes.
