I took these pictures of my plants earlier this month but haven’t had the time (or more like the energy) to write up a post about them. The first post about my Indoor Garden can be found here.

Mint
I started using the mint quite a lot. Mainly because it was being super unruly and needed a good trim. I added some more dirt in the pot and the mint plant is thriving.
Tomatoes
The tomato plant just keeps on growing. I am hoping that I can harvest some tomatoes before we move because it might be hard to move these plants. I also cut away a smaller plant that was with the other ones and it has started to root nicely in a salsa jar!

Chives
I love putting chives on everything. I even sometimes just grab some chive and munch on. I usually just use it in cold sauces or salads. The chive leaves are getting too tall to be in my little greenhouse so I need to start to use it even more!

Parsley
I mentioned in the last post (Indoor Garden #1) that the parsley was a herb that I bought at the grocery store and really thought it would just die. It didn’t, but it doesn’t look that great. I keep on using it in random recipes. Last night I pan fried haddock with some butter, garlic and some parsley. I was delicious.

Basil
The basil has GROWN! And it has been used! My main reason for wanting to grow herbs is because I love using fresh herbs in cooking and they are quite expensive in Iceland, never that fresh and covered in plastic.
I do need to add some more dirt into the basil pot and do some strategic pruning.

Salad Mix + Random Salad
So I just harvested the salad. I have harvested it about 2-3 times since my last post. I also decided to see if I could grow more salad from the salad head we usually buy at the store (it comes with roots), so far it looks promising.

Zucchini
Oh boy how this zucchini plant has grown in one month! I think I will get to harvest one zucchini in August. So excited.
