Let’s talk about June! After how much it rained here in May I was sure we would get a dry and good June. Oh boy, I was wrong. June has been super rainy as well.
The first weekend in June we went to a summer cottage and just enjoyed the first days of summer here on the south side of Iceland. The north side has had summer for a while because there is always good weather in Akureyri. It was a great weekend, we went to check out Gullfoss and Geysir. Always classic.

We also went on several hikes, the two that were the longest was the hike to see Glymur and then Reykjadalur. It was strange going to Reykjadalur since I went there frequently when I was younger and it has changed tremendously. But it was still a beautiful day and almost the only day this month that we had some sunshine!
I managed to harvest a couple of leaves from the salad I planted last month and it was delicious. I hope I can get another harvest in July!
Goals for June
Start knitting my lopapeysa- Read one book (that is not related to my thesis)
- Second month in a row that I did not accomplish this goal! I am reading a book, and I have finished 19% of it. Maybe I will finish it before next semester!
Hike up on two mountains- So I am counting the hike when we went to Glymur and the one to Reykjadalur as a hike up on a mountain.
Try a new recipe (either baking or cooking)- I baked some chocolate and raspberry muffins and a chocolate cake with espresso buttercream frosting and chocolate ganache.
- Have 15 days with no candy/sweets
- I did not reach this goal, mostly because of the above goal of baking, and then my parents came to Iceland with some delicious candy.
Goals for July
- Read one book (that is not related to my thesis)
- Only use my own containers when getting take-out.
- 15 days without candy/sweets
- 15 no-spend days
